- 3 eggs
- 1 small onion chopped
- 1 tomato chopped
- 1/4 red bell pepper
- 1 green chilli
- salt
- 1 tablespoon Blue Band margarine
- 5 tablespoon oil
- In a bowl, crack the eggs and add the onion, tomato, peppers, green chilli, and season with salt. Whisk together
- In a pan, add Blue Band and once melted pour in the egg mixture.
- Let it cook for 1 minute and then scramble it using a spatula
- Cook for 1-2 minutes and set aside
- In another pan heat oil and place the plantain slices cook for 2- 3 minutes on each sides until golden brown
- Serve fried plantains with scrambled eggs
