  • 3 eggs
  • 1 small onion chopped
  • 1 tomato chopped
  • 1/4 red bell pepper
  • 1 green chilli
  • salt
  • 1 tablespoon Blue Band margarine
  • 5 tablespoon oil
  1. In a bowl, crack the eggs and add the onion, tomato, peppers, green chilli, and season with salt. Whisk together
  2. In a pan, add Blue Band and once melted pour in the egg mixture.
  3. Let it cook for 1 minute and then scramble it using a spatula
  4. Cook for 1-2 minutes and set aside
  5. In another pan heat oil and place the plantain slices cook for 2- 3 minutes on each sides until golden brown
  6. Serve fried plantains with scrambled eggs
