  • 1 tablespoon oil
  • 1 teaspoon garlic minced
  • quater cup mushroom thinly sliced
  • salt
  • freshly ground black pepper
  • quater cup spinach chopped
  • 2 eggs
  • 1 teaspoon Blue Band margarine spread
  1. Heat oil in a pan and saute the garlic in it. Add the mushrooms, season with salt and pepper and cook for 2 minutes. Add the spinach, stir and set aside to cool completely.
  2. Once cooled, crack 2 eggs in a bowl and mix in the mushroom and spinach mixture.
  3. Heat margarine in a pan and add the egg mixture. Spread it out and cook for 1 ½ minutes on one side and then flip and cook for another 30 seconds.
  4. Serve with some toast and tea.
