- 1/4 teaspoon Blue Band margarine
- 1 1/2 all-purpose flour
- 2 tablespoons finely chopped walnuts
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 whole egg
- 1/2 cup brown sugar
- 1 cup milk
- 1 1/2 grated carrots
- 1 teaspoon vanilla extract
- In a large bowl, combine all dry ingredients except the grated carrots and brown sugar. Set aside.
- Using a cheesecloth pat the grated carrots until its juices are absorbed.Set aside.
- In another bowl combine all the wet ingredients together with the brown sugar and the grated carrots.
- Add the dry ingredients to the wet ingredients and mix just until the mixture is moistened. Do not overmix(The mixture is meant to be lumpy)
- Heat a frying pan with medium heat. Add 1/4 teaspoon Blue Band. Once melted pour batter by 1/4 cupfuls. Turn when bubbles form on top of the pancake; cook until the second side is golden brown.
- Transfer to a plate and serve.
