- 3 cups plain flour
- quater teaspoon salt
- teaspoon baking powder
- 3 tablespoon Blue Band margarine spread
- 2 tablespoon sugar
- 3 eggs
- half cup milk
- oil for deep-fat frying
- Sieve the plain flour and salt and then add baking powder. Set aside.
- In a large bowl, use a wooden spoon to beat together margarine and sugar until creamy.
- Mix into this one egg at a time followed by milk. Add the flour mixture into this and knead into a dough.
- Let rest for 30 minutes.
- Pull out a portion of the dough and roll out to a thickness of ½ inch.
- Use a pizza cutter or knife to cut out small portions of the dough in small rectangles.
- Fry the dough in hot oil for 6-8 minutes or until golden brown.
- Serve the mandazi with some tea.
